I read recently that to change the default runlevel on startup you
can edit / etc/inittab, id:5:initdefault and change it to 3 so that
it comes up to a console rather than X login.

I looked at my Debian testing box and it's set to 2. What are the
   init levels for Debian?

Here is a good web site on Debian init:

http://people.debian.org/~hmh/

For your purposes, all you really need to do is disable the init
script for or uninstall the X login (xdm?) package. Hope this helps.
