Kismet can see everything transmitted.  It might be overkill for what
you are looking for, but Kismet is the snooping tool of choice.

No, the point of wireless is typically to allow wireless communication
between your endpoints and your backbone, not to replace the wired
backbone itself.  Ideally, the area you have your extender would
typically just contain another AP with the same SSID.

I asked about running CAT5 to a location near where you have your
extender, not to the clients themselves.  Short of some really strange
cases (like WAN links), pretty much any well-designed network you look
at will use wired or optical connections for all the backbone and most
of the desktop connections.
