Most widescreen monitors (up until the advent of HD TV proliferation) have a native aspect ratio of 16:10. You can do the math from there to figure out what your options are.
If it is a newer monitor, it may actually be 16:9 as that is becoming more popular for DVI/HDMI monitors (1080p is basically 1920x1080 @ 60hz).
1024x768 is a 4:3 aspect ratio, so running it on any widescreen is going to give you rectangular pixels, hence the stretch.
