[GLLUG] a question of software choice

I set up a home PC for my family using Ubuntu (for ease of use.)  I setup Gnomebaker for burning CDs and DVDs.  I hadn't used this software before but it was suggested for the ease of MP3 integration.  My question is - is there an option which is gnome native (so I don't need other too many other libraries) that allows noise/hiss reduction, fade in/out and the ability to select two tracks and hear the transition from one to the next?

I remember sitting in front of the turntable and listening to the end of one song and then humming that in my head until I could place the new record and drop the needle on the next track. . . trying to get a good flow on my mixed tapes.  This seems the something everyone would want the ability to do with PC Audio CD creation.  Setting the  delay between tracks and fading out live tracks. . . 

Any help would be appreciated.  Something Ubuntu friendly would be great as well.
